In a shallow pot, heat 4-5 tbsp. of olive oil. Add the onion and sauté for 2-3 minutes until it softens.
Add the garlic, salt and freshly ground pepper and sauté for 1 minute. Add the tomato paste, sauté for 1 minute and pour in the wine.
Once the alcohol has evaporated, add the tomatoes and stir. Lower the heat and simmer the sauce for 10 minutes.
Add the mussels, simmer for another 4-5 minutes and turn the heat off.
At the same time, prepare the pasta. Fill a large pot with 5 liters of water and cook on high heat.
Once the water starts boiling, add 35 g salt and the MISKO Tubetti Half. Stir with a spoon and let the pasta boil for as long as indicated on the package.
Strain the pasta and sprinkle with 2 tbsp. olive oil. Mix gently.
Pour the sauce over the pasta and serve sprinkled with some finely chopped parsley.
