Mediterranean pasta with olives and green onion

500 g MISKO Twirls (Fusilli)

1 onion, finely chopped

4 green onions, finely chopped

80 g olives, sliced in small pieces

100 ml water in which the pasta was boiled

4-5 fresh oregano sprigs

olive oil

materials METHOD

First, prepare the pasta. Fill a large pot with 5 liters of water and cook on high heat.

Once the water starts boiling, add 35 g salt and the MISKO Twirls (Fusilli). Stir with a spoon and let the pasta boil for as long as indicated on the package.

Strain the pasta, keeping about 100 ml of the water in which we boiled the pasta and drizzle with 2 tbsp. olive oil. Stir gently and leave the pasta aside.

In a shallow pot, heat 4 tbsp. of olive oil. Add the onion and sauté for 2-3 minutes until it softens. Add the green onions, salt and freshly ground pepper and sauté for 2-3 minutes.

Add the olives, sauté for 2 minutes and add the pasta water. Bring to a boil and pour the pasta into the pot. Stir gently and remove from heat.

Serve the pasta hot, sprinkled with a bit of fresh oregano.
