MISKO Chilopites
500g MISKO Chilopites
1 rooster, cut into portions
2 onions, finely chopped
800g grated tomatoes
200ml red wine
2 tbsp. tomato paste
1 cinnamon stick
4-5 allspice grains
2 star anise seeds
1 tbsp. sugar
1 tbsp. sweet paprika
olive oil
salt
pepper
100g Mizithra cheese, grated

We sauté the rooster chunks with onions in 100ml olive oil.
Once the get a golden color, we pour in the wine.
We add the grated tomatoes, sugar, the tomato paste, cinnamon, allspice, salt, pepper, star anise and paprika.
We cover the pot and boil on medium heat for 1 hour and 30 minutes.
Then, we add 1 liter of warm water, and once it comes to a boil, we throw in MISKO Chilopites and let them cook for as long as indicated on the package.
We sprinkle with grated Mizithra cheese and serve.
