500 g MISKO Penne
2 tomatoes, cubed
1 green pepper, cubed
1 cucumber, cubed
100 g black olives
1 onion, finely chopped
200 g Feta cheese, cubed
2 tbsp. fresh oregano
freshly ground pepper
First, prepare the pasta. Fill a large pot with 5 liters of water and cook on high heat.
Once the water starts boiling, add 35 g salt and the MISKO Penne. Stir with a spoon and let the pasta boil for as long as indicated on the package.
Strain the pasta and rinse under cold water. Drizzle with 2 tbsp. olive oil and leave in the strainer.
In a bowl, put the tomatoes, pepper, cucumber, olives, onion, salt, Feta cheese, 4-5 tbsp. olive oil and 2 tbsp. balsamic vinegar.
Add half of the fresh oregano and mix all the ingredients together. Add the pasta and mix gently.
Serve immediately, sprinkled with the rest of the fresh oregano.
